Chinese Ginger Scallion Chicken Soup
This meal is comforting, delicious, and ridiculously easy.
This is a Chinese-inspired chicken soup that I’ve been seeing all over social media, and I had to try it for myself. I am HOOKED.
Not only do I love how healthy and nutrient-rich this meal is, but it’s SO easy to make.
You basically simmer chicken (preferably chicken thighs or chicken legs) in water with green onion and ginger for 40–50 minutes, add sea salt, and it creates this rich, flavourful broth with extremely tender chicken. You can eat it as is or pour it over rice or quinoa.

Chinese inspired ginger scallion soup
Ingredients:
Chicken thighs or chicken legs, skin-on and bone-in — however much you want
Green onion (scallion) — I never measure, but I use about 5–6 stalks for every 2-3 chicken thighs, and add more if I’m making a larger batch
Fresh ginger roughly chopped — I also don’t measure; just add a thumb sized piece for 2-3 chicken thighs (or 2-4 chicken legs) or add a little more depending on how much chicken you’re using
Filtered water
Sea salt, to taste
The measurements don’t have to be exact. This is a very simple soup, so just increase the green onion and ginger as you increase the amount of chicken.
Directions:
Add the chicken, green onion, and ginger to a pot.
Add enough water to cover the chicken by a few inches.
Bring to a boil, then reduce the heat to a low, gentle simmer.
Cover with a lid and simmer for 40–50 minutes.
When it’s done, remove the chicken and shred from the bone, and add it back to the broth
Discard the ginger and keep the green onion in the soup
Season with salt to taste and enjoy over rice, quinoa, or on its own!
Pro tip: I like to make a big pot of this as it tastes even better the next day!
