Blueberry Cheesecake Mousse
This recipe is SO good. It tastes just like a blueberry cheesecake and it’s low in sugar, high in fiber, and full of healthy fats, minerals, antioxidants, and so many other good things.
Serves 2
Ingredients:
1 cup raw unsalted cashews — soaked in water in the fridge for at least 4 hours or overnight, then drained and rinsed well (discard the soaking water)
½ cup blueberries — preferably frozen, but fresh works too
½ cup filtered or spring water, plus 1 extra tablespoon
Juice of 1 lemon
5 Medjool dates, pitted
Splash of pure vanilla extract
Generous pinch of sea salt
Directions:
Add all the ingredients to a high-speed blender and blend until smooth. If the mixture is too thick, add 1 tablespoon of water at a time until it blends.
Pour into a container, let set in the fridge for a few hours or overnight and enjoy!
