Chia & Quinoa Breakfast Bowl

This sweet quinoa breakfast bowl is a nourishing alternative to traditional oatmeal. It has that same warm, comforting feel, but is made with quinoa — a nutrient-rich seed that provides fiber, quality plant protein, minerals, and antioxidants.

Paired with chia seeds for even more fiber, healthy fats (omega 3), and nutrients, this simple breakfast will keep your body nourished and fuelled.

This recipe makes 1 serving**


Ingredients:

  • 1 cup cooked quinoa* (see note below)

  • 1 cup full-fat coconut milk or coconut cream

  • 2 tsp chia seeds

  • 1 tsp Ceylon cinnamon

  • 1½ tbsp pure maple syrup

  • ⅛ tsp vanilla extract

  • Pinch of sea salt

* Make sure to rinse and drain your quinoa thoroughly before cooking to help remove the naturally occurring saponins that can give it a bitter taste. I also recommend soaking your quinoa before cooking. Simply cover it with water and place it in the fridge for 8–24 hours, then thoroughly rinse and drain before cooking.
