Low sugar Chocolate Brownie Chia pudding

Ingredients:

  • 2 cups unsweetened coconut milk (1 16oz can)

  • 1/2 cup chia seeds

  • 2 tablespoons hemp hearts

  • 5-6 Medjool dates

  • 2 tablespoons cacao or cocoa powder

  • Generous pinch of sea salt

  • 1/2 teaspoon pure vanilla extract

  • OPTIONAL: a few dashes of cinnamon


Directions:

  • In a blender add the coconut milk, cacao or cocoa, dates, salt, and vanilla and blend on highspeed until smooth

  • Transfer the mixture to a bowl and add in chia seeds and hemp hearts, and mix everything together really well.

  • Put the mixture in the fridge for a few hours or overnight to let the chia seeds absorb the liquid.

  • Note: if the mixture is too thick, add 1 tablespoon or 2 of water and mix.
