Warm Caramelized Apples — Just Like Apple Pie Filling
(serves 2)
Ingredients:
4 apples, peeled and medium diced (preferrably Granny Smith, Honeycrisp, Pink Lady, Jonagold, or Jazz)
½ cup pure maple syrup
1 teaspoon lemon juice
1 teaspoon cinnamon (preferably use Ceylon cinnamon — regular cinnamon is high in coumarin which can be toxic when eaten regularly)
½ teaspoon pure vanilla extract
1 tablespoon coconut oil
Optional: Add a few dashes of pumpkin pie spice mix
Directions:
In a large pan or pot, melt coconut oil over medium heat.
Add the diced apples and cinnamon to the pan and saute for about 7-10 minutes until they’re soft.
Add in the lemon juice, maple syrup, salt, and vanilla.
Continue cooking the apples over medium heat, for about 3-5 minutes stirring occasionally, until most of the water evaporates out of the maple syrup and becomes thick, coating the apples.
