No Bake Blueberry cheese Cake

This is one of my favourite recipes I’ve ever come up with. It tastes unreal plus, it’s low in sugar, high in fiber, and full of healthy fats, minerals, antioxidants, and so many other good things.

Serves 2


Ingredients:

  • 1 cup raw unsalted cashews — soaked in water in the fridge for at least 4 hours or overnight, then drained and rinsed well (discard the soaking water)

  • ½ cup blueberries — preferably frozen, but fresh works too

  • ½ cup filtered or spring water, plus 1 extra tablespoon

  • Juice of 1 lemon

  • 5 Medjool dates, pitted

  • Splash of pure vanilla extract

  • Generous pinch of sea salt

Directions:

Add all the ingredients to a high-speed blender and blend until smooth. If the mixture is too thick, add 1 tablespoon of water at a time until it blends.

Pour into a container and let set in the fridge overnight.
